Thanksgiving is almost here so it’s time for a few more medicated recipes to bring some extra cheer to your season. Holiday foods like stuffing and mashed potatoes and gravy are great on their own but with a little help from the cannabis plant, they’re magical. The cannabutter recipe called for in these recipes can be found here.
Medicated Sourdough Stuffing
2 baguettes sourdough bread
8 tbsp cannabutter, divided (if lower potency is desired, cut with regular butter)
2 onions, chopped
3 cloves garlic, minced
4 stalks celery, chopped
½ tbsp chopped sage
½ tbsp chopped rosemary
½ tbsp minced thyme leaves
¼ cup chopped parsley
Sea salt
Black pepper
3 cups chicken broth or skimmed drippings
Cut bread into cubes and spread evenly across baking sheets. To dry, leave sheets on a counter overnight or place in oven at 200° for 20 minutes.
Using butter or cooking spray, coat the insides of a large baking dish and preheat oven to 350°. Place 3 tbsp of cannabutter into a large frying pan and cook over a medium heat. Add onions and celery and cook until soft and tender. Stir in rosemary, thyme sage, and garlic and cook for an additional minute. Salt and pepper to taste.
Add remaining 5 tbsp butter and parsley. In a large bowl, combine bread, chicken broth, and frying pan mixture. When mixed, transfer to baking dish and cover with aluminum foil. Bake for 45 minutes then remove foil and continue baking until top is golden brown.
Medicated Cauliflower Au Gratin
5 tbsp cannabutter, divided
5 tbsp all-purpose flour
4 cups milk, hot
1 large head cauliflower (2 lb), cut into florets (8 cups)
½ cup Parmesan cheese, grated
1 cup Gruyère cheese, grated
Sea salt
Black pepper
½ cup panko or bread crumbs
Preheat oven to 375°
Bring large pot of water to a boil and add salt. Add cauliflower florets and boil for 5-6 minutes until tender but still firm. Drain.
While the cauliflower is boiling, melt and stir 3 tbsp of cannabutter in a medium saucepan over low heat. Add flour and stir for 2 minutes. Stir in hot milk until it comes to a boil. Whisk for until thickened and remove from heat. Add pepper, nutmeg, parmesan, 1 tsp of salt, and ½ cup of Gruyère.
Pour 1/3 of the mixture into an 8 x 11 baking dish and add cauliflower. Pour remaining sauce evenly across the top and coat with panko/bread crumbs and remaining Gruyère.
Melt remaining cannabutter and drizzle over top, sprinkle with salt and pepper. Cook for 25-30 minutes until top is browned.
Sweet & Spicy Medicated Pecans
2 tbsp cannabutter
1 tsp sugar
1/8 tsp cayanne pepper
½ tsp sea salt
2 cups pecan halves
Preheat oven to 375 °
In a skillet over a medium heat, melt cannabutter. Stir in sugar, cayenne pepper, and salt. Add pecans and toss to coat.
Spread pecans evenly across a large baking sheet and place in oven. Bake for 10-12 minutes until toasted, stirring occasionally.
